Baking Lab Equipment

DRR (Dough Rate Reactor) measures the leavening reaction speed of dough or batter, at a constant temperature of 2TC. This rate of reaction, (percentage of gas released over time), is controlled by the physical and chemical characteristics of each leavening acid
